How to Staff a VIP Table Night
A great VIP night looks effortless from the booth. Behind it is a staffing plan: the right roles, the right ratio of staff to guests, and people who have done the room before. Here is the run-sheet we see the best nights use.
The roles that matter
Most VIP table service comes down to four roles. Nightlife ambassadors own the guest relationship — greeting, seating, reading the table's energy. Bottle service staff run product, presentation and sparkler moments. A host or concierge controls the door list and flow so the floor team never has to leave the table. For bigger programs, a dedicated photographer earns their fee twice over in next-day content.
- 1 ambassador per 1–2 tables is the comfortable ceiling — past that, service becomes order-taking.
- Sparkler and presentation moments need a second pair of hands; never have the table's own server disappear to stage them.
- Give the door one owner. Split door authority is how comps and walk-ups end up at the wrong table.
Brief like a professional
The difference between staff and great staff is usually the brief, not the person. Share the table map, the spend expectations by table, VIP names (and how to address them), the photo policy, and the escalation path — who handles an over-served guest, who calls security, who talks to the venue manager.
Do the brief in writing, in the same channel you booked through, the day before. On-the-night verbal briefs evaporate by the second seating.
Where nights go wrong
Three failure modes cover almost every bad VIP night: staff who have never worked a high-spend room and freeze on service standards; no-shows discovered at 9pm with no bench; and cash-arranged staff with no accountability when something goes missing or a guest complains. All three are staffing-supply problems, not talent problems — they come from booking through DMs with no verification, no reviews, and no backup plan.
